i promised the ppk that i would post this recipe weeks ago. well, that never really happened, until now. i am just happy that i haven't lost the recipe, with the crazy amounts of cleaning i've done since then. but i didn't, and here's the recipe, highly inspired by vegandad's italian meatballs.
here it is, the tuna burger, served with rice noodles, red kimchee salad, ginger carrots and lemon-y mango chutney.
and here's the recipe for Vegan Tuna Burgers:
250 g. tempeh, steamed for 10 minutes, then shredded
1/8 cup roasted sesame seeds
1/4 cup nutritional yeast
1/3 cup vital wheat gluten
1 onion, finely chopped
1 stalk celery, chopped (optional)
5-6 cloves garlic, crushed
1 tsp arame seaweed, crushed
1-2 sheets nori, crushed
1 1/2 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
wet ingredients:
2 tbsp soy sauce
1 tbsp sushi seasoning (you can sub some vinegar and sugar)
1 tbsp lemon or lime juice
oil for frying.
in a big bowl; mix grated tempeh with sesame seeds, nutritional yeast, vital wheat gluten, onion, celery, garlic, arame, nori and spices.
add in soy sauce, sushi seasoning and lemon juice, and mix with a fork until combined, then use your hands to knead a bit.
shape into burgers or meatballs or what you feel like, and fry at medium heat for at least 10 minutes - the burgers should be hot all of the way through.
i recommend that you try serving them with spring onions, cilantro and limejuice, but i am sure you guys can find tons of ways to use these babies.
